WHITE ASPARAGUS 2012 AT LES AMIS

The harvest of the coveted white asparagus indicates the end of the bitter winter season and Les Amis restaurant gets in the action of the next highlight in the gourmet calendar with a spring menu featuring white asparagus from Beelitz, Germany.

Unlike the green asparagus, the albino cousin of the asparagus variety is bred for its thick shoots, closed heads, and a mild and non‐bitter taste. From 25th April to 9th June 2012, Les Amis’ White Asparagus menu boasts of six stellar recipes that were created to accentuate the unique flavour of the edible shoot. One of the six items on the menu includes a white asparagus risotto paired with lettuce and confit egg yolk priced at $60++. According to Chef Leitgeb, “The risotto which is aged for seven years combined with the “fatty” flavoured additions in the dish helps the delicate taste of the white asparagus to shine.”


Besides importing the sweet and tender produce from Beelitz, the ‘vegetable garden’ of Berlin, Chef Leitgeb transports the traditional way of white asparagus feasting in Europe to the restaurant’s dining room. Culturally, families in Europe gather and tuck into a white asparagus spread served together with slices of ham, potatoes, poached eggs, spinach, mushrooms, hollandaise, sauce gribiche placed at the centre of the dinner table. Les Amis offers an identical European white asparagus experience with ‘The Family Affair’ option for a “family‐style” experience priced at $100++ per person and served by the table.
