Francis Chew operates the Sembawang Prawn Noodle here at You Huak Restaurant at 22 Jalan Tampang, Sembawang from 7am to 11 am from Thursdays to Tuesdays, they are closed on Wednesdays.
A bowl of Prawn Noodle S$5.00 comes with three large shelled deveined prawns. I usually order the yellow noodles as these readily absorbs the full flavor of the seasoning sauces used to make this dish. The kitchen makes the prawn soup out of the prawn heads & shells to lend it a fragrant distinct prawn flavor. I love it that chef uses a fair amount of fried pork lard to give the noodles an added aroma & crunch. The chili sauce used to flavor the noodles tastes sweet spicy, and blends very well with the dark sauce.
I always add some of the fried shallots with chili flakes, plus a spoonful of chili powder to give it that extra Oomph.
