Spicy Thai - Thai Cafe at 115 Aljunied Ave 2 #01-35 S(380115) - Three Signature Thai Desserts

Desserts
Spicy Thai - Thai Cafe serves a good selection of Thai desserts using humble ingredients. Below are three of the Signature must try desserts:

1. Thai Red Ruby priced at S$3.50 per serving  served here at Spicy Thai - Thai Cafe.

Core Ingredients - Suntan, basil seeds (expanded with water), water chestnut colored with Thai rose syrup.

How it is prepared - The water chestnut is first soaked into Thai red syrup, filtered out & set to dry, then rolled into tapioca flour, then boiled in water for 15 minutes. The dessert is served with the water chestnut cubes, to it is added the suntan, the basil seeds, ice & served cold.

Tasting Notes - The water chestnut colored with Thai rose syrup has a flavor similiar to Bundung syrup. The tapioca somewhat lends a crunch to the water chestnut cubes.

2. Lemongrass Jelly with Aloe Vera cubes & Calamansi priced at S$2.50 per serving.

Core Ingredients - Lemongrass jelly (lemongrass is boiled & to it is added the jelly powder to form the jelly layer), canned Aloe Vera cubes, Calamansi.

Tasting Notes - There is a tinge of sweetness that comes from the canned Aloe Vera cubes, plus a tinge of refreshing sourly citrus from the Calamansi. The Aloe Vera cubes lends a springy crunch, the lemongrass gives the tender soft refreshing bite, & these makes for a cool respite from the warm hazy weather.

3. Sticky Glutinous Rice with Mango priced at S$6 per serving.

Core Ingredients - sliced Thai mango, glutinous rice with palm sugar garnished with toasted white sesame seeds, suntan.

Tasting Notes - Founder Ron Poh gets the Thai Mango direct import from Thailand from his supplier. Chef adds palm sugar to the glutinous rice to  lend a mildly sweet tinge. The sourly sweetness comes mainly from the Thai mango, coupled with mild sweetness from the glutinous rice, plus a rich creamy sweetness from the coconut milk (suntan), slight bit of sourly flavor from the mango to give you an overall sweet creamy feel to this dessert.
