Caruso Italian Restaurant Singapore located at 791 Bukit Timah Road, Unit #01-01, is founded by Italian Leonardo Palmisano, age 31, who hails from Puglia, Italy, from a town call Locorotondo. 




The Origin of Caruso  
Founder Leonardo Palmisano chose the name Caruso named after the legendary opera singer Enrico Caruso.





Background of Founder 
Caruso Italian Restaurant Singapore's Founder - Leonardo Palmisano, 31, is not a chef by training, but do have a chef in the family, a cousin who is a very famous chef in Italy. Leonardo Palmisano brings with him a total of 16 years' experience in the F&B industry, particularly in the restaurant management business.
Caruso Italian Restaurant Singapore is Leonardo Palmisano's first F&B foray in Singapore, and commenced operations on September 2013. Leonardo has plans to open more Caruso sister outlets in the city & town areas when there are suitable locations. 
Before starting Caruso, Leonardo Palmisano was formerly the Operations Manager from Donna Carmela at Greenwood, & had been in Italy all this while. 
The Ownership 
Caruso Italian Restaurant Singapore is solely own by Leonardo Palmisano. 
Back in 2009, Leonardo Palmisano came to Singapore on the invite of Executive Chef Angelo Ciccone (brother of Executive Chef Mario Ciccone) who had already established a name for himself in Singapore at the Regent Hotel. 
Leonardo Palmisano came here in 2009 for a holiday, loves Singapore, it weather, its people, its culture, & stayed here since then. This is his 6th year in Singapore, whilst his Italian family remains in Italy. 
The Cuisine 
The cuisine served at Caruso Italian Restaurant Singapore located at 791 Bukit Timah Road, #01-01, is typically southern Italian homestyle, rustic, Mamma Mia style, using whole, real, fresh ingredients. The Italian sauces, dressings, marinates here used at the kitchen at Caruso Italian Restaurant Singapore are all homemade from scratch. 

The two Executive Chefs Mimmo Piccoli & Mario Ciccone use Extra Virgin Olive Oil (EVOO for short) in all their cooking. The two Chefs receive their first culinary lesson from their own mothers. Interestingly all 3 mums (of the Founder Leonardo Palmisano & two Chefs) work in the F&B industry, in restaurants in Italy.  Here's a peek at Chef Mario Ciccone's Mum busy making delicious homestyle breads in the kitchen when she visits. 







Food Ingredients are of Italian origin
Because of Leonardo Palmisano's Italian heritage, roots & connections, all the ingredients (such as tomato, rocket salad, EVOO) used here at Caruso Italian Restaurant Singapore hails from Italy & are from Italian suppliers.  

The Signatures 
Caruso Italian Restaurant Singapore's Signatures includes Pasta, Pizza, Tenderloin, Seabass dishes such as :
  • Spaghetti seafood with white wine, fresh tomatoes, mixed fresh seafood, (*Panzerotti Tartufarti**)
  • Ravioli with Portini mushroom & mushroom with truffle cream sauce,
  • Pizza Mamma Mia (*Mozzarella, spicy pork salami, mushroom & onions**), 
  • Pizza Trulli (*Our Traditional house**) using onion, chilli, Mozzarella & tuna.  


Bar Manager 
The lovely Ms Carlotta Brianzoni is currently the Bar Manager handling the Bar Counter.
