Executive Italian Chef Mimmo Piccoli, 25, hails from Puglia & brings with him 10 years' of culinary experience in Italian cuisine when he came onboard to helm the kitchen at Caruso Italian Restaurant Singapore located at 791 Bukit Timah Road, #01-01.
Chef Mimmo Piccoli went to F&B School in Italy. He came to Singapore in 2013 on the invite of Caruso Founder Leonardo Palmisano. He works as the Executive Chef at Caruso Italian Restaurant Singapore & specialise in the Pasta & Main course served here. Chef Mimmo Piccoli is inspired by his uncle who is a famous chef in Italy and aspires to make a name for himself here at Caruso Italian Restaurant Singapore.
The Cuisine 
The Cuisine served here at Caruso Italian Restaurant Singapore is typically Southern Italian. Chef Mimo Piccoli uses EVOO as one of the key ingredients in his cooking here at Caruso. 
A lot of the dressings, sauces, marinates used here at Caruso are made from scratch here at the kitchen at Caruso. 
Besides the culinary skills he picked up from culinary schools, Chef Mimmo Piccoli's culinary skills are also influenced by his Mum.

  • Baccala arrosto con sughetto di vongole (Roasted co fish with clams & spinach)


  • Trancia di Tonno alla Mediteranea (Tuna with onion capers olives frome gaeta & cherry tomatoes with white wine & extra virgin olive oil)
  • Gamberoni alla Griglia (Tiger prawns with rocket salad & lemon oil).

I had the good opportunity to savour the Squid Ink Pasta with fresh large prawn created by Chef Mimmo Piccoli.  The pasta is cooked lightly al dente and still retains the chewy texture, with the pasta evenly coated with the squid ink.
