Part 1 Roland's Restaurant at Marine Parade - Thomson Road Baptist Church 75th Anniversary Celebrations

For two meals in a row on 2 Dec 2012 this past Sat I was feasting at two Chinese restaurants : the first was at Mong Hing Teochew Restaurant Pte Ltd at Keypoint for lunch, followed by dinner at Roland's Restaurant at Marine Parade.

2 Dec 2012 - Thomson Road Baptist Church celebrates its 75th Anniversary with 65 tables at Roland's Restaurant for its congregation (Dad is a member of its Teochew congregation). He had booked seats for 7 but Grouch One was not feeling well so I had to replace her, with much glee on my side as I get to capture precious moments of the Chinese Cuisine proudly prepared by the Chefs at Roland's Restaurant.

Here's a peak at the 10 course dinner at $$30 per head :

冷盘
Cold Dish Combination consists of breaded vegetable roll, cold salad prawns, meat roll (Hei Zo )虾枣, Japanese styled baby octopus, Fu Yong egg in a basket

酸辣羹
Sweet & Sour Soup

豉汁蒸鱼 Steam Fish in Black Bean sauce

Part 4 Roland's Restaurant - Thomson Road Baptist Church Christmas Dinner 25 Dec 2011

The Christmas Dinner draw soon to a close as the Waitress serve the last 2 dishes for the evening :

Fried Ee Mian - delicious when eaten with their in house chilli sauce and green cut chilli

Red Bean Paste - delectable dessert my all time favourite

Could resist but I had to take a photo of these two lovely ladies for the night, both church sisters at Dad's Teochew church.

Part 3 Roland's Restaurant - Thomson Road Baptist Church Christmas Dinner 25 Dec 2011

The Yam Basket at Roland's Restaurant seems (compared to Kimly Seafood at New Upper Changi Road ) a little last lustre in terms of taste.

For a Yam Basket to taste really great, you have to use fresh yam steamed & mashed, then shaped into a circular ring, then introduced to the deep fried oil wok only when the oil is boiling hot.
Otherwise if the oil is still not boiling, the oil will stick to the Yam Basket and you'd get a resin oily taste.
To give the Yam Ring a little more taste, it'd be very generous if the Chef mashed in a pinch of pepper,  salt, a dash of sesame seed oil, and some blended nuts to give it a nutty taste. If  I am the Chef I would even blend in some water chestnut & persimmon bits to render a sweeter taste to the Yam Basket. And to make the Yam Basket more appealing I'd add more cashew nuts, scallops, diced chicken bits, & fresh deshelled prawns to the central core of the Yam Ring.

The Chicken saved the day. The flavour is inclined towards Thai Style, with a special sauce blended with ingredients such as Thai Chilli Sauce, Rojak Bud, fresh cut shallots, sesame seeds, dried octopus shreds, drizzled over deep fried cut chicken fillet.

The vegetable dish looks ordinary but tastes good. The Abalone Mushroom sliced to resemble that of real Abalone could fool  child's eyes, but not a gourmet's tastebuds. The Abalone Mushroom is surprisingly crunchy, not chewy, the Chef has painstakingly selected good quality ingredients to deliver quality taste to delight our palate.

Part 2 Roland's Restaurant - Thomson Road Baptist Church Christmas Dinner 25 Dec 2011

For the first time in my life, I tried the Patin Fish that was served as the 3rd dish at Roland's Restaurant. The meat proves to be tender & succulent.

The live prawns steamed in a Tim Sum basket seemed to be the star of the night. The prawns were succulent & juicy and most importantly - FRESH !
So fresh that I managed to deshelled three for Dad who devoured them in barely less then a minute.

Now the key to steaming live prawns ala minute so they taste superbly juicy, is to first place the live prawns in the freezer for about 6- 8 minutes, then place them in the streamer and steam at medium low heat  for about 8 minutes when the water in the steamer is barely boiled.

Part I Roland's Restaurant - Thomson Road Baptist Church Christmas Dinner 25 Dec 2011

25 Dec 2011 Sunday evening I joined Dad & Grouch Two & Stanley for dinner at Roland's Restaurant at Marine Parade Central. Dad's Thomson Baptist Church organised a Christmas Dinner for the congregation and Dad sponsored the 3 tickets as he dines free.

I was at Roland's Restaurant 4 years ago when my church organised our church Anniversary here. I remembered the place was not that lavishly furnished yet. But 25 Dec 2011 was an eye opener. Roland's Restaurant really grew from strength to strength. Roland himself is a Christian but he attends another church not Thomson Road Baptist Church. The evening dinner each table costs S$350.

I manage to take photo shots of the food as they were served.

This is the traditional dish served at most Chinese Weddings : The Cold Dish Combination which usually has four or five different starters served in a platter. The starters are usually Salad Prawn, Japanese Octopus, Scallop, Ngor Hiong, Jellyfish.

This next dish tastes like shark's fin soup, but is likely crab meat soup made with the consistency like that of shark's fin.

Roland Restaurant is located at the East side of

Singapore right in the Heart of Marine Parade
