Rong Guang at Alexandra Village

Handsome Chef Joe is the owner/ operator  of Rong Guang at Alexandra Village, he and his brother (business partner) has another Rong Guang atUlu  Pandan that is helmed by his brother (partner).

Joe has been in the Food business for about 30 years and has a clear following at Alexandra Village Food Centre before its renovation. However before Alexandra Village completed their renovation, Joe moved Rong Guang to the current coffeeshop at Blk 127 Bukit Merah Lane 1 next to  Alexandra Village Food Centre. It was a great move as the current dining area is spacious ad has more seating capacity.

The Top Ten Signature dishes here are : Spicy BBQ Sambal Sting ray, Chilli Crab, Herbal Chicken Soup, Sweet Sour   Crayfish, Sambal Clam, Sambal Sotong, Chye Poh Pomfret, Stir Fry French Beans with Dried Shrimps, Home Made Tofu, Curry Fish head. In addition I also love Rong Guang's Prawn Paste Chicken, Sambal Kang Kong.

The serving portion has grown over the years. Joe used to use smaller sized spring chicken for his herbal chicken soup, but now uses a much bigger size bird as he explains that his customers are mostly office workers & the blue collar who work around Alexandra area, so he has to feed bigger stomache. Also the gravy for his herbal soup used to be thicker broth,  but now he switches to a thinner broth yet still retains the flavour. I can be assured that the sweetness of the soup comes from the dates hes uses & the chicken bones, not MSG.
