Mini Steamboat Spread at Chicken Hot Pot at NEX Part 7

Mini Steam-boat : When you are done with consuming your hot pot, remember to ask for soup base to top up in your hot pot to make your mini steam-boat. 

Chicken Hot Pot restaurant has a complete selection of steam-boat ingredients you can choose to dip into the mini steam-boat. They are neatly packed and shrink wrapped on different color plates and kept at 2.2 degrees in a chiller to ensure freshness of the ingredients. 

Depending on the color of the plate, the pricing are as follows :
Yellow Plates @$1.80 each 
White Plates @$2.80 each 
Black Plates @$3.80 each

Fish in a Pot - Chicken Hot Pot at NEX Part 6

The last dish I tried was the Fish in a Pot at Chicken Hot Pot restaurant. 


The chef uses catch of the day  - either Grouper or Snapper, marinated in special marinate, fried, then placed in hot pot with soup base broth of preserved pickled vegetables. The preserved vegetables lend a salty taste to the soup. Great for young children & the old folks who prefer a non - spicy soup broth.

The fish meat is fresh and juicy, and the fried fish meat gives the soup broth an added fragrant flavor. That is why this is my number fourth choice. 



Beef Behemoth - Chicken Hot Pot at NEX Part 5

My third dish at Chicken Hot Pot at NEX served was the Beef Behemoth (Beef Hot Pot), which ranks number three of my choice of favorites at Chicken Hot Pot restaurant. 


The fresh beef meat are cut to cube sizes about 3 cm by 3 cm which makes it easier for the meat to cook thoroughly. The beef is marinate with the special prioprietory recipe, and stewed for hours till tender at the kitchen, then served in the Hot Pot upon order, as beef takes a longer time to cook. 

Not surprisingly, the beef is soft and tender, the gravy infuses through the meat, lending a savoury taste.  The addition of green capsicum, onions, celery give the gravy a sweet tinge.





Scandalously Spicy Shrimp - Chicken Hot Pot at NEX Part 4

My second dish was the Scandalously Spicy Shrimp (Prawn Hot Pot).

The sauce for the Prawn Hot Pot tastes like the thickened version of Tom Yam soup - is spicy mildly sweet, and is my favourite among the four flavours. 

The chef uses large fresh prawns and takes extra effort to carve the prawn on its dorsal side (split nearly in half through the dorsal side) - otherwise coined "butterflying" which shortens the cooking time, and allows the meat of prawn to totally be infused with the gravy so that it soaks up the flavour of the Tom Yum sauce. 

In addition the chef de-veined the prawn, making it easier for diners to consume the prawn fuss-free. The prawns are cooked just right, tastes sweet, juicy, and of a firm texture - a clear indication the prawns are absolutely fresh !! 



Had you take a closer look at the Prawn Hot Pot, you'd notice this - layered below the prawns are.........crinkled cut French fries that are totally soaked into the Tom Yum gravy sauce. 

This reminds me of my Indonesian Chinese Mum-in-law's favorite signature dish - pork strips with green & red capsicum, onions, French fries stir-fry with chili rempah. This dish was taught by her Indonesian aunt. The French fries are infused with the spicy chili to exude a sweet & spicy taste. 

Many may find Prawn Hot Pot's inclusion of French fries a rather usual and extraordinary way of eating French fries, some may even find it makes the French fries soggy. But to those who really enjoyed this method (like yours truly) it is a treat indeed !


Besides fries, the Prawn Hot Pot is laden with lots of fresh vegetables ( e.g. celery), onions and spices. 
This winning combination makes this dish my number one choice at Chicken Hot Pot. 



Chicken Hot Pot Signature - Chicken Hot Pot at NEX Part 3

My first dish at Chicken Hot Pot was their Signature :

Chicken Hot Pot - though the sauce recipe is top secret (even the franchisee owners Jonathan & Doris do not know the ingredients that goes into making the Chicken Hot Pot sauce), the taste is similiar to the thicken gravy of my Mum's Signature ginger garlic chicken wing stew. 

My mum used to make her ginger garlic chicken wing stew by frying ginger slices, whole garlic cloves, then adding chicken, oyster sauce, sesame oil, stir fry & slow cook chicken till the meat is tender. The end result taste close to the sauce found in Chicken Hot Pot. 


To the Chicken Hot Pot is added onions, capsicum, ginger. The taste of the sauce is mildly sweet in part because of the onions. The chicken meat is cooked tender, and the fragrant smell of cooked meat permeates from the hot pot. 

Of the four different Hot Pots I had tasted at Chicken Hot Pot, I would rank the Chicken Hot Pot as my number two choice as the sauce reminds me of my Mum's signature chicken dish. 


Background - Chicken Hot Pot at NEX Part 2

Background  : Chicken Hot Pot at NEX Shopping Mall is the third restaurant owned & operated by Mr Jonathan Siow together with his sister Ms Doris Siow & Brother-in-law Mr David Chow (spouse of Doris), under the company Chicken Hot Pot (S) Pte Ltd.

Branches: Two other Chicken Hot Pot branches are found at : 10 Sinaran Drive, #04-02A/B/C, Novena Square 2 and 799, New Upper Changi Road, #02-35/36, Bedok Point. 


Menu : Chicken Hot Pot Restaurant serves four main types of seafood & meat (Chicken, Prawn, Beef & Fish) in different sauces with varying degree of spiciness ( non-spicy, Mild Spicy, Spicy).

The signature dish is Chicken Hot Pot.

Accolades : Chicken Hot Pot originated from Shanghai, 69 Wu Jiang Road. The following are the accolades that Chicken Hot Pot had garnered since 2002. 

Company started in 2008, opened its first outlet at Shenton Way. Jonathan Siow used to work as sales & marketing engineer whilst Doris Siow was from the Financial Banking Industry. 

Unique Dining Concept : Jonathan stayed in Shanghai for 6 months where he discovered some restaurants in Shanghai serve mini clay-pot steamboat and found the taste to be unique. The hot pot could be served as shared portion or as individual pot. The food was first eaten with the sauce, and when close to finishing the food in the claypot, soup was added to the sauce to form a mini steamboat. 
This unique concept of hotpot cum mini steamboat has since been brought into Singapore by Jonathan & Doris. They have obtained franchise rights for Singapore market for ten years from Shanghai franschiser. They are planning to open two more Chicken Hot Pot outlets in 2013, totaling five outlets, eventually to grow the business to eight outlets island-wide.

Target : shoppers, families, students, PMEBs, 

Training : Management of Chicken Hot Pot (S) Pte Ltd believes strongly in staff training : trainers from HQ   train kitchen & frontline staff. 

Menu changes : Menu planning are managed by HQ which includes expansion of menu recently to include fish. 

Ordering & Payment : 
Restaurant operates on post paid concept, and diners place their orders at the counter. 

Quality of ingredients & sauces : Fresh meat & seafood are delivered daily from local sources. whilst the unique sauce with proprietary recipes are ordered from Shanghai. 

Caterings & Takeaways : Currently the restaurant does not provide catering services, but do offer takeaways. 

Bookings : Bookings for functions are considered on ad hoc basis. 

Seating Capacity : Restaurant provides seating capacity of 70 pax. 

Diners can be assured the hot pot is cooked ala minute upon order taken. As there is no central kitchen, all meats and seafood at Chicken Hot Pot are cooked at each individual outlets. Restaurant uses wax-based warmers and is convenient & easy to use.

Choice of 3 sizes : Small for 1 pax, Medium for 2 pax, Large for 3 pax.
