This is the Penang Kway Teow ($7)I tried at Rumah Sayang at JEM. Chef Lo uses core ingredients : fresh large prawns, tau gay, squid, fish cake, spring onions, thin kway teow, eggs, chicken ham, fish sauce, chili paste (that is blended in-house and made using shallots, garlic, onions, dried chili, red chili, chili padi, ikan bilis, a dash of dried shrimp).
How it is prepared : The chili paste rempah is first simmered first till flavor exudes before the kway teow is added. This is followed by the other ingredients : tau gay, squid, fish cake, spring onions, eggs, chicken ham. Fish sauce is added to give it an added flavor.

Food Tasting Notes: Chef Lo uses thin kway Teow. The color of kway teow is a very light brown color as Chef Lo uses fish sauce, and tastes spicy due to the chili paste. The fresh squid used is nicely sliced and cooked till tender. The large prawns are butterflied, de-veined and cooked just nice, not overly done, is chewy, juicy, and sweet.
