Core Ingredients include - Hokkaido Scallop, Poached Quail egg, Parmesan Cream, garnished with Bacon Ash.
Tasting Notes - Chef Christopher Millar pan-seared the Hokkaido Scallop on the outside, leaving the inside al dente. The result: the Hokkaido Scallop is fresh firm sweet juicy with a lightly smoky charred flavor on the outside. The Quail egg is poached just right with the egg yolk runny & gluey. The Parmesan cheese formed a smooth foam lending a light cheesy creamy flavor to the Scallop with the Bacon Ash giving a salty savoury taste to the sweet Scallop. A winning combination of flavors!

His Culinary Career
Chef Christopher Millar's culinary career includes positions at award-winning, iconic restaurants in London, Melbourne and Sydney.
Chef Christopher Millar trained under Celebrity Chef Antony Worrall Thompson in London where he began a 7 year stint, & eventually promoted to head chef of the iconic 190 Queensgate.
In Melbourne, he was appointed Executive Chef at the legendary Windsor Hotel, and two years later as the Executive Chef of the prestigious Pavilion on the Park in Sydney. Both restaurants were awarded one Chef’s Hat by the Age Good Food Guide and Sydney Morning Herald Good Food Guide respectively.
After he left Australia he moved to Singapore in 2003 to be the Executive Chef of The Fig Leaf & Poppi at Fort Canning Singapore, achieving 10/10 un Tatler's Singapore's Best Restaurant Guide.
In 2009 Chef Christopher Millar joined the One Rochester Group to be the Group Executive Chef, & directs the culinary Team at Stellar at 1-Altitude at One Raffles Place level 62. At 1-Altitude, Chef Christopher Millar continues to demonstrate his culinary talent and imagination by creating unique dining experiences that draw the praise and appreciation of Singapore’s gastronomes, most recent, being the all new Gastronomy menu and the upcoming Wine Lust Sunday Brunches. Chef Christopher Millar's menu bring the diner on a modern gastronomic adventure where each dish focuses on one star ingredient's flavors & textures.
