Chef Profile: Douglas Tay


With over a decade of F&B experience, and armed with a slew of gold medals and accolades at global culinary competitions, including the Culinary Olympics and WA Oceanafest, chef Douglas Tay is the new Chef de Cuisine at Australian celebrity chef Scott Webster’s Osia restaurant at Resorts World Sentosa.

Prior to joining Osia, Douglas honed his culinary skills at the popular Equinox complex at Swissôtel, The Stamford, delivering world-class dining experiences to guests.

Described as an enthusiastic and innovative chef, Douglas has been trained in the ‘new school’ of cuisine and consistently looks ‘out of the kitchen’ for ideas that he can incorporate into his menu. In his constant pursuit for perfection, he takes no short-cuts in his quest to provide his guests with the utmost in quality food and service. His novel out-of-the-box culinary ideas continually astound guests and he demonstrates that putting together the freshest ingredients can result in extraordinary flavours and colours on a simple white plate.

A man of few words, Douglas lets his food do all the talking.

Another pearl in the necklace of gems at Resorts World Sentosa, Osia is the brainchild of famous Australian celebrity chef Scott Webster. With Chef de Cuisine Douglas Tay taking charge of the daily kitchen affairs, Osia presents an innovative ala carte menu inspired by fresh Australian produce combined with Asian influences and Western culinary techniques.

The restaurant’s interactive open kitchen concept allows guests to watch the chefs in action – making magic and transforming these ingredients into delightful and delicious morsels.

Chef Profile: Alvin Leung



London-born, Toronto-raised Alvin Leung is a truly unique chef who has travelled extensively since childhood, making him well-versed in different cultures and cuisine. Although professionally trained as an engineer, Alvin draws inspiration from his visits to culinary heavens like El Bulli, Fat Duck and Joël Robuchon’s restaurants on a regular basis.

Alvin’s unique brand of “X-treme Chinese” cuisine combines centuries-old recipes with modern ingredients and cooking techniques, resulting in lighter  and more refreshing dishes in turn with modern palates. Using fresh seasonal market produce sourced locally and internationally from trusted suppliers, Alvin’s menu changes constantly showcasing the best of what’s on offer in the markets.

Recognised by his peers as one of the most creative chefs in Asia, Alvin regularly appears in master classes and demonstrations alongside celebrated chefs such as Ferran Adrià, Rene Redzepi and Martin Berasategui. In 2009, Bo Innovation became Hong Kong’s only independent restaurant to be awarded two Michelin stars. Alvin is also one of only two self-taught chefs in charge of a professional kitchen that has ever received Michelin stars, with the other being Heston Blumenthal.

Alvin is the midst of opening another Bo Innovation in London, UK.

Located in the heart of Wan Chai, this two Michelin star Hong Kong hotspot is also listed in the S. Pellegrino World’s 100 Best Restaurants and The Miele Guide’s Asia’s Top 20 Restaurants.

Darren Chen: The man behind SAVOUR 2013

A profile on the man and his passion for food


Known for his unique combination of charm and dry wit, Darren Chen is the mastermind behind SAVOUR, Singapore’s premier festival of culinary adventures as unique as himself. In its 2nd edition, SAVOUR returns from 11 to 14 April 2013 with an even larger cast of players – much to the credit of Darren’s vision and driving force.

Although an engineering graduate from the National University of Singapore, Darren was drawn into the corporate world. It was in sales and marketing that he found his calling, specifically in sports marketing early in his career.  

“Obviously I did not choose the well-beaten path; perhaps it would have been easier if I had stayed in engineering. However my experiences have indeed enriched me – I wake up in the morning with a bounce in my step, simply because I’m one of the lucky ones who really love what they do,” Darren shares.

Armed with Asia-wide sports marketing and sponsorship experience, Darren joined Singapore GP Pte Ltd, the organiser of the FORMULA 1 Singapore Grand Prix, as Director of Corporate Sales, 18 months before it was due to host it’s first race. He was instrumental in developing a strong corporate hospitality program, which, in turn, was key to the long-standing support of the event by major corporations such as SingTel and Standard Chartered Bank. Darren adds, “The biggest challenge I faced in that role was the sheer weight of expectation to organise a truly global event with a massive global audience. Nevertheless, it was fun working on the project, especially if you are an F1 fan, though you get less star struck by the likes of Fernando Alonso and Lewis Hamilton through prolonged exposure!”

As one who loves taking on challenges, Darren stepped into the role of Executive Director of Savour Events, the organiser of SAVOUR, when the opportunity arose in 2011. Despite what people may believe, Darren was quick to point out that his role does not mirror the fun and glamour associated with the event. “I oversee key areas of SAVOUR which won’t make the front page news, such as event operations, production of the events’ content, finance, as well as the sales and marketing. How unsexy is that?” Darren quips. The first edition in 2012 was a success, even making the World’s Best Food Festivals list on CNN Travel.

This self-confessed kampong boy had lofty ambitions for SAVOUR. Seeing the passion for food being a common denominator between different cultures and countries, he wanted SAVOUR to be a platform of opportunities for all participants regardless of social or occupational status – chefs and restaurants get to introduce themselves and their foods to regional visitors, producers and manufacturers test their products in the marketplace, sponsors avail themselves brand exposure and attendees get access to all of the above, in one convenient location.

Darren shares further, “Thematically, the first SAVOUR came with celebrating the delicious – positioning this event as a culinary playground where visitors can find something for everyone. The second edition takes this journey further along – we now place the mapping of this trek in the hands of the attendees, and facilitate for them to create their own culinary journey.”

Although he’s rubbed shoulders with international masters of the culinary arts, Darren’s food interests are much simpler and closer to home. He enjoys home-cooked comfort food, especially food from mum’s Peranakan heritage.

Chef Profile: Julien Royer


Young chef Julien Royer is inspired by the Artisanal Cuisine Movement, built around a passion to showcase the freshest ingredients through simple but beautiful dishes that reflect both culinary traditions and his own creativity.

A native of Cantal in Auvergne, France, Julien’s pedigree comes from his training under the best names and restaurants in the business – Michel Bras, Bernard Andrieux, Jean Georges Vongerichten and Antonin Bonnet. From these masters, he learnt about taking the simplest ingredients and showcasing them in brilliant flavours in their own right.

Most recently, he was the Chef de Cuisine of Brasserie Les Saveurs at the St Regis Singapore, before his appointment at JAAN. Here, Julian has been given a greater outlet to promote his own culinary ideas. His devotion to sourcing the very best products from only the most discerning suppliers has taken him all over the world in order to discover what foods taste best at each part of the year.

Chef Profile: Kyung Soo Moon


Executive Chef Kyung Soo Moon helms Mikuni’s fabled kitchen at the Fairmont Singapore. With an epicurean philosophy based on extracting the most out of every ingredient, his creations reflects the rich history of Japanese cuisine with flair and artisanship.

Kyung Soo, who has cooked for the royal family of the United Arab Emirates, and has served his masterfully-crafted sushi for Hollywood A-listers, an international football superstar and his fellow Korean – Rain, brings with him a wealth of knowledge and over 16 years of experience in Japanese culinary arts.

Born and raised in Seoul, Korea, Kyung Soo was most recently the Head Chef of Hashi Japanese Restaurant at the Armani Hotel Dubai. Prior to that, he was Chef de Cuisine at the Japanese Fazaris Restaurant as well as the Head Sushi Chef of Ariake Japanese Restaurant at The Shilla Hotel Dubai.

Paying homage to the fabled richness of authentic Japanese cuisine, diners will enjoy Mikuni's modern approach to traditional Japanese dishes. Highlighted by the Executive Chef Kyung Soo Moon's artisanal cooking deft and skills, this restaurant offers a robatayaki counter teeming with action-packed, Japanese-style grilling, dynamic sushi, sashimi and teppanyaki stations, and a vibrant Sake Bar.

Chef Profile: Sam Leong

With over 26 years of culinary expertise and innovation under his belt, Sam Leong is Singapore’s very own celebrity chef. Trained by his father, a Malaysian chef well known for his shark fin dishes, Sam stepped into the kitchens at Jiang Nan Chun at the Four Seasons Hotel as Executive Chef at the tender age of 28. Later with the Tung Lok Group, he was appointed the Director of Kitchens/Corporate Chef, where he set the standards for modern Chinese cuisine in Singapore.

Sam has represented Singapore at some of the world’s most prestigious culinary events, including the annual James Beard Foundation Awards, Annual St Moritz Gourmet Festival in Switzerland and the Flavours of Asia at Napa Valley, California.

His numerous awards, include receiving the Best Asian Ethnic Chef of the Year, Executive Chef of the Year and Chef of the Year Awards for several years at the World Gourmet Summit’s  Awards of Excellence. In 2008, Sam was honoured with the Five Star Diamond Award and was recognised as one of the finest chefs worldwide in the American Academy of Hospitality Sciences.

Sam has appeared in several television shows in Singapore, and has authored several cookbooks – A Wok Through Time, Sensations and A Taste of Home.

Restaurant Profile: Forest


In his first partnership foray with Resorts World Sentosa, local celebrity chef Sam Leong’s Forest is making waves in Singapore’s culinary scene for its bold reinvention, reinterpretation and contemporising of Chinese cuisine. The “theatre kitchen” in Forest was designed to give patrons an unobstructed view of the chefs at work making magic in the kitchen. Chefs Leong and Mike Tan also take a Western approach in the service and presentation of dishes. Guests are strongly encouraged to experience Forest’s innovative 8-course or 10-course Discovery Menu – which promises to take diners through a bold journey of tastes.

Chef Profile: Manjunath Mural

With more than 14 years experience, Mumbai-born Corporate Executive Chef has worked in the best five-star hotels in India including The Centaur Hotel, The Renaissance and Madh Island.

With a strong desire to popularise modern Indian cuisine, he came to Singapore in 2006 as part of the opening team of The Song of India working alongside Master Chef Milind Sovani. His efficient execution of Indian desires coupled with his creativity and precise attention details have won the hearts of many diners at this iconic establishment.

He has served his creations to many Bollywood celebrities, prominent industrialists, political leaders, and even past Prime Ministers of India. He has authored popular cookbooks including Khana Khazana: Celebration of Indian Cookery. Chef Manjuhas also participated in numerous competitions and won medals, including the Gold award at the Singapore Gourmet Hunt 2006. He is most well-remembered for his stellar performance on the very popular Channel News Asia Reality Cooking Show ‘The Perfect Meal” in 2009 being the Finalist and continued on in season 2010 as mentor chef to the new entrants on the show. 

Restaurant Profile: The Song of India





Housed in a beautiful black-and-white heritage bungalow, The Song of India promotes contemporary Indian cuisine, which is more refined, presentable and global, challenging and changing the common misconceptions about Indian food, prepared by Corporate Executive Chef Manjunath Mural. 

The restaurant also promotes contemporary Indian art, displaying these art pieces and sculptures for diners to enjoy and purchase. The Song of India also holds art exhibitions changing the painting and art works from time to time, giving a dynamic dimension to the warm and inviting interiors. 

The restaurant has been lauded with many awards including the World Gourmet Summit Awards of Excellence and Hospitality Asia Platinum Awards, and has been referenced in many food publications like The Miele Guide, Singapore Tatler as well as Wine and Dine as one of the top restaurants in Singapore.
