Morganfield’s™ Brings Home the American Rib Tradition

Morganfield’s™, the ‘Home of Sticky Bones™’, is set to introduce the groovy pleasures of the all-American barbecue to Singapore with its first outlet at The Star Vista.
Rooted in the spirit of Southern hospitality, the updated American diner is fashioned after the new breed of BBQ restaurants in New York, lending a touch of sophistication to the hearty, rustic barbecue tradition that is always coupled with warm hospitality.
The 180 seater restaurant offers a sprawling view of the Vista Exchange. Morganfield’s™ sports an updated American diner look, focusing on recycled materials such as using recycled woods for the walls, repurposing zinc roofs for the pillars or fashioning chengai
wood flooring into tables. One of the key design features are the movable bar tops at the 60-seater al fresco area. Solid I-beams formerly used as support pillars for buildings are converted into high top bar tables, with wooden tops that customers can slide across and combine into tabletops of their desired size.
The venture is helmed by Hong Kong owner and General Manager Kevin Chung. Raised in Australia, Chung discovered the joys of the American barbecue tradition and how it magically draws people together during the three years he was posted to New York.
While holding on to a management position at a multinational company at the time, he was inspired to introduce this slice of barbecue culture to Asia.
“One of my greatest memories was the Big Apple Barbecue Block Party where the whole Madison Square Park is converted to a food park, with the country's top barbecue chefs cooking for 100,000 people over a weekend. In New York, everyone was always looking for ‘a great barbecue restaurant’ to add to their little black book,” he shared.
This is why the heart of Morganfield’s™ lies in its signature dish - Sticky Bones™ - a truly authentic, old-fashioned prime pork rib slow-cooked and smoked to tender mouthwatering perfection, then basted with a sweet and tangy hickory flavored barbeque sauce with a hint of cider.
Under the ‘Sticky Bones™’ section, the signature selections include Hickory BBQ Spare Ribs,
Tuscan Baked Spicy Spare Ribs
and Smoked Peppercorn Spare Ribs
(S$24.90 for a half slab and S$36.90 for a full slab).
Each full slab weighs more than 2 pounds.
Following the tradition of American barbecue, the Morganfield’s™ menu boasts a strong focus on pork-focused dishes, including constant innovations such as a Hot Rib Sandwich – hot chunks of pork ribs pulled off the bone and tossed in a special BBQ sauce
sandwiched in a warm buttered bun.
Complementing the ribs are a selection of classic American diner favourites, such as the Chilli Cheese Fries, Tequila Spiked Chicken,
Smokehouse Bacon Cheeseburger,
Cheese Steak Sandwich
and Homemade Apple Pie.
Morganfield’s™ has also launched the Kids Eat for Free programme. Available on Saturdays, Sundays and Public Holidays, kids below 8 years or 120cm in height will get to enjoy a free meal for every adult’s main meal. A maximum of two kids’ meals can be
redeemed per table.
The food menu is accompanied by an equally all-American drinks list, with alcoholic and non alcoholic drinks offered in pitchers.
The cocktail lineup includes classics such as Long Island Ice Tea and new creations such as Strawberry Apple Mojito. A range of nonalcoholic coolers boast all-time American favourites such as Ice Cold Lemonade. Alternatively, there are Morganfield’s™ unique creations such as the Passion Fruit Punch.
