The Basmati rice served at the Executive Indian Buffet Lunch is fragrant, full of aromatic spices, comes as solid grains and of good grade. Between the yellow Basmati and white Basmati, the former is my favourite. 

Core ingredients to making a delicious Basmati yellow rice includes : tumeric powder, rice, water, green peas, oil, salt, Asafoetida, mustard seed, cumin seed, Cinnamom stick, red chili, bay leaves, cayenne pepper.

Brinjal Carrot Vegetable Dry Curry Masala Mix -has a buttery and sweet taste, and the herbs used includes star anise, green chilli slices, various spice powders, and tastes mildly spicy due to the green chili added. Chef Rana uses oil and butter hence it's buttery taste. This is my favorite vegetable curry choice of the day. The brinjal, carrots, beans, onions are sauteed so tenderly to the bite, yet retains their shape and form really amazes me!

Kerala Fish Curry - this is the dish well loved by our former President Mr S R Nathan. This Kerala Fish Curry taste slightly a little more spicy and salty compared to the Kerala Chicken Curry, the fish meat is fresh and tender.

Kerala Mutton Curry - The Mango Tree Indian Coastal Restaurant at I12 Katong

The Executive Indian Buffet Lunch at The Mango Tree Indian Coastal Restaurant served a really mouth-watering Kerala Mutton Curry. 

The mutton is totally infused with the flavor of the curry, the meat is stewed till tender in bite size pieces and tears off easily, with a melt in your mouth feel. The mutton curry gravy is surprisingly only mildly spicy so you can tuck into as much of this good stuff as your stomach permits.





The ingredients to making a good mutton curry :
lamb cuts, yogurt, salt, refined oil, bay leaves, black cardamom, green cardamom, onions, ginger, garlic, coriander powder, red chili powder, tumeric powder, tomatoes, garlic, ginger, cumin powder, dry red chilies. Here's a take at how easy it is to cook mutton curry below:
