This is the fifth year that festive dishes will be made available on Carousel’s buffet counters during CNY. Highlights this year include stir fried king prawns in spicy citrus lemon grass, fresh garlic with coriander leaves, deep-fried garoupa braised in herbal sauce with Chinese leeks and spring onions, slow-cooked boneless duck with bean curd skin, Chinese mushrooms in dark soy sauce. These dishes will be available during the lunch and dinner meal periods from 22 January to 24 January 2012.

Carousel's delectable spread of fresh produce
In addition, the culinary team from Carousel decided to whip up a creative interpretation of the conventional yu sheng by including ingredients such as fresh lobster and ginseng to usher in the auspicious Year of the Dragon. The Eight Treasures Lobster Yu Sheng is symbolic of the dragon year as lobster translated in Mandarin means, “long xia” where “long” also refers to dragon. Chinese herbs which represent the Eight Treasures are specially selected by the Culinary Executive Chef, Abraham Tan. They are ideal for a wholesome beginning to the new lunar year as they known to be beneficial to the body and immune system. The specially concocted mango and passion fruit sauce will also make up the finishing touch, before tossing to another blissful year.
The Eight Treasures Lobster Yu Sheng will be available for take-away at $150 for a small portion (4 to 6 persons) and $180 for a large portion (8 to 10 persons) in Gourmet Carousel from 16 Jan to 6 Feb 2012.
