Kimly Seafood at Yishun Ave 11 Block 418 Part 2

9 Nov 2011 Sat, Bob & I, Grouch Two & Stanley & Dad  - all five of us went to Kimly Seafood at Yishun Blk 418 to get our Zhi Char fix.

I was keenly observing how the Stall waitress prepares the Tie Ban Dou Fu (Hotplate Tofu) I have always wondered how they serve the tofu piping hot? Want to know the secret? Watch the video and you'd be in awe and full of respect of chefs who pride in their work.

Reminds me of Anton Ego the food critic who when he discovered it was a humble little mouse Remy who was behind all those delectable nostalgic dishes finally affirms that indeed anyone can be a great chef.

I quote his conclusion below :
In many ways, the work of a critic is easy. We risk very little yet enjoy a position over those who offer up their work and their selves to our judgment. We thrive on negative criticism, which is fun to write and to read. But the bitter truth we critics must face, is that in the grand scheme of things, the average piece of junk is probably more meaningful than our criticism designating it so. But there are times when a critic truly risks something, and that is in the discovery and defense of the new. The world is often unkind to new talent, new creations, the new needs friends. Last night, I experienced something new, an extraordinary meal from a singularly unexpected source. To say that both the meal and its maker have challenged my preconceptions about fine cooking is a gross understatement. They have rocked me to my core. In the past, I have made no secret of my disdain for Chef Gusteau's famous motto: Anyone can cook. But I realize, only now do I truly understand what he meant. Not everyone can become a great artist, but a great artist can come from anywhere. It is difficult to imagine more humble origins than those of the genius now cooking at Gusteau's, who is, in this critic's opinion, nothing less than the finest chef in France. I will be returning to Gusteau's soon, hungry for more.

Kimly Seafood at Yishun Ave 11 Block 418 Part 1

Bob & I have dinner with Grouch Two, Stanley & Dad at Kimly Seafood's Branch at Yishun : Block 418 Yishun Ave 11 on Sat Nite 9 Nov 2011.

Kimly Seafood usually delivers great food and this Sat they again did not fail to surprise with newly invented dishes.

We tried out their Rose Wine Chicken Soup. This delightful thing about this dish was that they bothered to use fresh chicken instead of frozen supermarket chicken.

The chicken must have been cooked in slow fire /heat for many hours to give it that flavourful taste. To make it sweet the Chefs used red dates, the ginger gave it a slightly bitter taste. They used evaporated milk to give the soup a rich flavour.
