Lamington is a dessert of Australia, made of sponge cake squares coated traditionally in Chocolate icing, then in dessicated coconut. Lamington can be served as two halves, with a layer of cream in between them.
Mad Jack Cafe has further land an Australian twist to its menu by introducing Lamingtons as one of its popular dessert cakes.
