Claypot Assam Fish Head - Grandma's at NEX

The Claypot Assam Fish Head is the Signature Dish served at Grandma's at NEX. The Fish head is served piping hot on a Claypot with solid fuel burner below to retain the warmth of the gravy. 

Food Tasting Notes : the Assam Fish gravy tastes spicy due to the blended chili, lemony sourly due to the assam added. I can also taste the garlicky, gingery tinge of the rempah in the gravy. The fresh fish head is cooked ala minute. Chef does not use MSG at all. The soup taste also like that of Penang laksa soup, and has a sardinely taste, the Chef could have used some mashed sardine in it. Then again the ingredients were not revealed so it is just my observation. There is one ingredient which I suspect is used: torch ginger flower (bunga kantan) as I often use this ingredient when I cook my Nonya Chicken curry, and the torch ginger gives a distinct fragrant aromatic tinge to the dish.
