Spicy Thai - Thai Cafe at 115 Aljunied Ave 2 #01-35 S(380115) - Signature Basil Black Pepper Crab

This is the Signature Basil Black Pepper Crab served at Spicy Thai - Thai Cafe at 115 Aljunied Avenue 2.  

Core Ingredients - Founder Ron Poh shares that he uses live fresh Sri Lanka Crab (from supplier Sri Lanka Marine Pte Ltd who ships about 15 crabs daily to Spicy Thai - Thai Cafe), black pepper, basil. Founder Ron Poh prices his Sri Lankan crab (about 600 to 650 gm per crab) at average rate of about S$35 per crab. 
How it is prepared - Typically this dish is prepared by stir frying the basil, black peppercorns & crab together for about 15 minutes till the crabs are fully infused with the flavor & aromas of the black pepper corns & the basil & is deemed cooked. 

Notice that the Black pepper crab served here are not as starchy as those served in other restaurants - Chef Moonpeng Meedee does not use much oil in this recipe because he uses herb basil whose flavor might be lost if too much oil is used. 

Ron Poh share that most customers prefer female than male because female crabs have more meat. He pointed out that male crabs have bigger pincers but smaller body.
