Chuan Wei Fang Spicy Crab at People's Park Complex Food Centre


Chuan Wei Fang Spicy Crab at People's Park Complex serves up menu of 29 items featuring Sichuan Cuisine. Everyday a huge line forms at this stall during peak hours especially in the evening where office crowd comes here for dinner. This dishes are mainly stir fried and cooked ala minute. 









Bob & I love the cooking style as the stir fry dishes are tasty, the core ingredients are cut into bite sizes so the flavours are infused into the cooked food. 

Generally dishes cooked Sichuan style leeks of salt and oil. Somehow the chefs here at Chuan Wei Fang Spicy Crab have adjusted the salt & oil level to cater to the local palate. Here's a peek at our dinner for the evening :

Pomelo - Chinatown Chinese New Year Festive Bazaar



Pomelo (Youzi 柚子) is a symbol of : abundance, prosperity, having many children and as such is an important tradition for Chinese families to buy pomelo for Chinese New Year. In addition, pomelo is one of the ingredient for the Yusheng during the Reunion Dinners. 
Perhaps one incentive to consider eating pomelo including its rind - its rind is rich in bioflavonoids to help fight cancer, prevent spread of breast cancer cells in simply allowing body to remove excess estrogen.

Persimmons - Chinatown Chinese New Year Festive Bazaar


Persimmon is a commonly found dried fruit snack the Chinese eats during Chinese New Year. I remember as a young child, my Grandma used to wash the white sugary powders off the persimmons, and divided one into several portions so I could share them with my cousins. Persimmon is one of those fruit snacks eaten during Chinese New Year that brings back so many nostalgic childhood memories. 





These persimmons are grown & harvested all over China, from Manchuria to Yunnan. The dried fruit is great for asthmatic cough, chronic dysentery, hemorrhoids, blood in the urine.

Chinese New Year is the season where Bak Kwa retailers like Lim Chee Guan does a brisque business, with queues in the range of more than 50 people at any one time, usually stretching through several lanes in Chinatown, and for long hours. It does take a certain special recipe to make these die hard fans come back for more every year, despite the price hike much closer to the Chinese New Year date. In fact the demand was so great the pork flavour was sold out the day that this video was taken.


Nonetheless those who faithfully come early does enjoy their priced Bak Kwa meat with much glee, often either eating them on its own, or sandwich between breads, or added to rice.

Another popular Bak Kwa brand in Singapore is Fragrance (Xiang Wei 香味) with 21 outlets in Singapore. Weeks closer to Chinese New Year, queues form at these outlets to pick up freshly barbecued Bak Kwa marinated in special recipes handed down from the founding matron of Fragrance  (Xiang Wei 香味)

Din Tai Fung opens new outlet at Chinatown Point Part 1









Back in 1927, a man named Bingyi Yang in Shanxi, China migrated to Taiwan in search of better opportunity. He found found work as a delivery man at Heng Tai Fung - a store that markets cooking oil. After Bingyi worked for two years at Heng Tai Fung, the owner of Heng Tai Fung was rather impressed with his hard work, and placed Bingyi in charge of the accounts.

Unfortunately Heng Tai Fung was forced to close its business after the owner suffered other business losses, leaving Bingyi out of work. 


Despite this setback, Bingyi started his own oil shop with wholesale oil sourced from Din Mei Oils. As a mark of respect to his first boss at Heng Tai Fung, Bingyi named his new store Din Tai Fung.
However, around 1980's when tinned oil went on sale, sales at Din Tai Fung plummeted. Bingyi sought  advice from a friend and together with his wife, converted half of their shop towards making and selling steamed dumplings. 

Many customers were drawn to the quality and exceptional taste of Din Tai Fung’s steamed dumplings. The business took off thanks to its strong word-of-mouth. From then on, Bingyi stopped selling oil at Din Tai Fung, and concentrated in the steamed dumpling business and over the years, turned Ding Tai Fung into the full-fledged restaurant it is today.
This was the humble and inspiring beginning of an international brand – Din Tai Fung.

In 2003, BreadTalk Group obtain franchise rights to run Din Tai  Fung Brand of restaurants, and opens its first Din Tai Fung at Paragon Shopping Centre. To date there are 14 Din Tai Fungs in Singapore with its latest two outlets opened at Chinatown Point & Parkway Parade.

Bee Cheng Hiang at Chinatown

Chinese New Year is that time of the year when you see long queues at retail stores such as that below that sells barbecued meats known as Bak Kwa 肉干in Singapore - be it pork, chicken, beef that are barbecued over a charcoal fire. Bak Kwa is one of the favourite delicacies eaten by the Chinese during Chinese New Year. 

Traditionally Bak Kwa is made with raw minced meat marinated with spices, sugar, salt, soy sauce,   flattened into thin square slices, dried on racks at temperatures 50-60 degrees Celsius, then barbecued over live charcoal fire. 


In Singapore, one of the top three Bak Kwa store is Bee Cheng Hiang that dishes out delicious mouth watering Bak Kwa that is the Asian equivalent of the western meat (beef/ pork) jerky.

Coin shaped Bak Kwa to represent gold coins to bring in a little festive cheer during this Chinese New Year season

Bacon Bak Kwa is the new favourite as the fatty parts give a delightfully rich flavour.

This broken parts comes from the ends & corners of the whole meat slices, and are sold at a more affordable price. Bak Kwa prices do go up by more than 20% during the festive season due to the huge demand.

Preserved Meat at Chinatown Chinese New Year Bazaar Part 1

Preserved meat, duck & sausages are traditionally found at specialised preserved meat stalls in Chinatown during the month before the Chinese Lunar New Year. 




Chinese sausage 腊肠 (Lap Cheong) is a common delicacy seen often at tables of the Chinese more so during the Chinese New Year season. Pork with some fatty meat is passed into casing made from pig intestine lining, then compressed, dehydrated and dried. 

Legend has it that in 1894 - during the 20th year reign of the Emperor Guangxu 光绪 in the Qing Dynasty, a porridge seller named Su Depei 苏德培 in Guangdong to used leftover pork meat & liver - he added salt, sugar & soya sauce to marinate, then placed them in a casing to dry for days. Hence the Chinese sausage was developed. 

The dark colored Chinese sausages are made using  pig liver. 






These shorter Chinese sausages are made with about 50% fatty pork meat, hence the one bits appear more prominently.



Preserved duck腊鸭 can also be found during the Chinese Lunar New Year season. They are either sold whole in flattened shape  or as legs. 


According to the Yi Jin 易经 - the history to preserving meat using salt dates back almost more than 2000 years ago way before the refrigerator was invented. Using raw meat (pork, duck, chicken, fish, beef) and preserving them serves to extend their shelf-life, plus the preservation process makes the the meat more flavourful and tasty.

Steps to preparing the preserved meat involves frying the raw salt in the wok till hot, then adding the raw meat into the hot salt, wait till it cools down, then marinate the meat & leave for a week, after which wash the meat & leave it to dry in the sun, lastly use fire to smoke the meat till the color darkens.
