Cafe Salivation at 176 Race Course Road - The Signature Mango Ice Cream

This is the Signature Mango Ice-cream served here at Cafe Salivation located at 176 Race Course Road.

Core Ingredients - Milk, Fresh cream, finely blended Pistachio & Almonds, Condensed milk, Cardamon powder, Mango puree (bought from supplier). 
How it is preparedThe ratio of Mango to Cream to Milk in the ice cream mixture is 1:1:2. Chef mixes all the ingredients together then freeze it till it hardens. Usually Chef prepares batch of 8 pieces.

Tasting Notes - I love that this mango ice cream has a creamy milky sweet mango flavor with a nutty tinge. 



About Cafe Salivation 
Prasad Raja, 62, Director at Homely Raj Pte Ltd which manages the Raj & Jade groups of restaurants here in Singapore, and second Generation in the business started by his dad the elderly Mr Raja, is a pure vegetarian. 

It helps that Mrs Raja (Karen), 59, who is of British & Indian descent is a self taught chef at home, and improvises with the various ingredients she could find to come up with great tasting vegetarian cuisine with Mexican, Italian, American influences she serves her husband at home. 

With experiment comes experience, and with experience comes confidence, leading to a business idea to using these self taught recipes she has invented to start truly pure vegetarian cafe serving cuisines with Mexican, Italian, American influences. 

This marks the birth of Cafe Salivation back in 2008, which started its operations at Syed Alwi Road where Mrs Raja, Karen manages the kitchen. It was a good 3 years at Syed Alwi Road before rising rental caused the Rajas to move Cafe Salivation to 176 Race Course Road right next to Farrer Park MRT in the North East Line where the rental was more reasonable.

It was this passion to make vegetarian cuisine hip and trendy among the foodies in this little isle of Singapore that keep Karen Raja 3 years & going on strong in her campaign to encourage vegetarian diet. 
Over here at Cafe Salivation - Karen Raja & her management holds the Philosophy that vegetarian food need not be bland, but can be tasty & healthy. The kitchen uses sunflower oil in the cooking process, & do not administer MSG in any dishes at all. The ingredients used in the recipes for the various dishes at Cafe Salivation serves to tantalise the tastebuds of the customers without compromising their waistlines.

Cafe Salivation at 176 Race Course Road - The Signature Coconut Ice Cream

This is the Signature Coconut Ice Cream with Pomengranate served here at Cafe Salivation located at 176 Race Course Road. 
Core Ingredients - Dessicated coconut milk, Milkmaid condensed milk & silken tofu. 
How it is prepared - The dessicated coconut milk, Milkmaid condensed milk & silken tofu, are in ratio of 1:1:1, they are blended together till smooth, then place in a mould, & allow to freeze & set in freezer.
Tasting Notes - Coconut flavor comes out strongly, bits of dessicated coconut inside. Not overly sweet. Smooth soft texture, great dessert dish for vegans looking for gluten free ice cream. Pomengranate gives extra tarty bite.

Cafe Salivation at 176 Race Course Road - The Signature Basil Cream with Caramelised Peaches

This is the Signature Basil Cream with Caramelised Peaches served at Cafe Salivation located at 176 Race Course Road.


It is made using Core Ingredients - Basil infused cream, piped onto canned caramelised peach slices (using peach, brown sugar, cinnamon, butter), topped with Basil leaves (julienned), mint leaves, Oat & Pistachio crumble. 

How it is prepared
The peaches are from cans, Chef simply sliced into smaller slices & caramelised in butter, sugar, cinnamon.

To make the peaches - Chef toasts the peaches with brown sugar, a bit of cinnamon & butter till they are caramelised, then it is plated. 

To make the Basil cream - Chef soak Basil leaves in the cream (from supplier) for an hour, then the Basil leaves are removed. He uses 25 grams Basil leaves for every 500 gram of cream.

To serve, Chef simply warm up the cream, then pipe it onto the poached peaches, & add oat  & pistachio crumble to it to lend it a nice crunchy texture. 

Tasting Notes - The Basil has distinct flavor like that of coconut. To garnish Chef simply julienned some Basil leaves & topped the Oat & Pistachio crumble.

The Oats & Pistachio crumble has a nutty flavor that paired well with the sweeten caramelised peach.

Cafe Salivation at 176 Race Course Rd - Chickpeas & Brown Rice Burger

This is the Signature Chickpeas & Brown Rice Burger served here at Cafe Salivation located at 176 Race Course Road. 

This is a vegetarian burger with patty made using Chickpea & brown rice served on a homemade sesame burger bun together with lettuce, tomatoes, fresh cut onion rings, straight cut fries. 
Core Ingredients - Chickpeas & brown rice patty (made using chickpeas, brown rice, lemon, parsley, coriander, spring onions, lime, salt & pepper). The patty is served on homemade sesame bun, lettuce & tomato slices, with straight cut french fries & garden salad. 
How it is prepared
To make the patty - Chef uses chickpeas, brown rice, lemon, parsley, coriander, spring onions, lime, salt & pepper. 
The chickpeas & brown rice are parboiled till 90%,  then coarsely blended with lemon, parsley, coriander, spring onions, lime, salt & pepper to make into a patty using white flour. 
The patty is dipped in batter & coated with bread crumbs, deep fried till golden brown for about 3-4 minutes at high heat, & served on homemade burger bun. The bun is made in house. 
Tasting Notes - This is a savory dish, the chickpeas & brown rice patty is very moist & chewy. 
Contents are still moist as the batter & bread crumbs actually seals in the moisture & flavors. 
The herbs used : parsley & coriander adds to give a rich aroma to the patty. 
The homemade sesame bun is soft & easy to bite, a lot of air pockets. 
The fresh onion rings & garden salad  gives an added crispy bite to this dish.

Cafe Salivation at 176 Race Course Rd - Black Bean Tostrada

This is the Signature Black Bean Tostrada served here at Cafe Salivation located at 176 Race Course Road.

Core Ingredients - Tortilla, Black Bean paste, spicy salsa, Red & green Jalapenos, Cucumber.

How it is preparedTo make the Tortilla from scratch, Chef uses rice flour & tapioca flour, with chopped parsley, a little chili, salt & turmeric. 

To make the Black Bean paste - The black bean is sauteed with cumin, chili powder (paprika), & salt, it is gluten free, no onion, no garlic is used in this recipe. The mixture is sauteed & blended coarsely. 

The Black Bean paste is served on Tortilla.
To serve, the Tortilla is topped with black bean paste, homemade Spicy Salsa, pickled red & green Jalapeno slices, cucumber. 


Tasting Notes - This dish has Mexican flavor. 
Strong cumin & paprika flavor in the Black Beans. Aftertaste is a distinct, strong flavor of paprika, balanced by the Tortilla, even out the spicy paprika flavor. The Salsa has a spike of spicy taste, has a tarty bite, with residual spicy flavor as Chef uses chili in the salsa to add level of spiciness. 
Black bean paste with cumin & paprika, salsa has tinge of spiciness, to give a uniform spicy flavor to this dish.
