At Lee's Taiwanese, the pork belly are marinated, braised and stewed in stainless steel pots, for about 1-3 hours at the central kitchen, then delivered fresh to the outlets daily, where they are kept in warmers. The pork belly should not be stewed too long as the meat might simply dissolve into the soup broth.
My Food Tasting Notes : The pork belly is stewed to the right consistency and texture, where the fats in the pork belly melts in your mouth. The meat is infused with the marinate, tastes savory and lightly sweet. This dish is served with pickled vegetables and pickled cucumber, Tou Fu, Taiwanese sausage, half a hard boiled egg. The vegetable gives a lightly sourly sweet taste.
