Bottle Cap Cafe at 511 Guillemard Rd #01-54 Grandlink Square S(399849) - The Mushroom Soup at S$3.90 per serving

This is the Signature Cream of Mushroom Soup priced at S$3.90 served on the lunch & dinner menu at Bottle Cap Cafe located at 511 Guillemard Road, #01-54, Grandlink Square.

Core Ingredients include - Fresh Shiitake mushroom, garlic, onions, soup base using butter, onion, flour, cooking cream, fresh full cream milk, black peppercorns.

How it is prepared - For the soup base, Chef Khaw makes the soup base using core ingredients: flour, butter, onion, cooking cream, full-cream fresh milk & cooked these for 30 minutes. He made about 1 to 2 litres of the soup base fresh daily as he prefers it to be fresh without any preservatives & therefore more healthy.

For the mushroom, Chef Khaw julienned the fresh whole Shiitake mushrooms, then sauteed stir-fry them with garlic & onions in the pan. To make 1L soup, Chef uses about 250 gm of fresh Shiitake mushrooms.

To the sauteed mushrooms, Chef Khaw adds the soup base and stirs them in on slow fire till them are mixed well & cooked thoroughly. Here at Bottle Cap Cafe Chef Khaw does not blend the mushroom with soup base as his is a vegetarian recipe unlike some restaurants that do blend as they use chicken stock as their soup base.

(**Chef's Tip of The Day ** - to rid the mushroom of the earthy flavor, Chef Khaw recommends to sauteed the mushroom well, to sweat it out completely, till it browns.) Chef Khaw shares he does not use white wine to flavor this mushroom recipe since it will bring up his cost. Tasting Notes - This fresh Shiitake mushroom soup is made from scratch, the serving is thick & served with lots of julienned Shiitake mushroom. There is a generous dose of fresh cream with tiny bits of black peppercorn. The overall taste is savoury, creamy, full of that mushroomy flavor, added with a distinct flavor of black pepper used in this recipe.
