The Awesome One is made using Core Ingredients - Homemade salted caramel sauce, fresh cut Del Monte bananas, lemon zest, 2 pancakes, almond flakes shavings, dash of sugar icing.

How it is prepared - For the salted caramel, Chef Shawn Koh makes the salted caramel sauce from scratch by first melting sugar in water in saucepan then evaporate it to form melted sugar, then let it boil again to let the sugar caramelize. When the color reaches the desired shade, then he adds in the butter, followed by cream, then sea-salt. Chef Shawn Koh uses Del Monte banana fresh.

Here are Chef Shawn Koh's Tips to making good pancake:

The Awesome One pancake is of buttermilk flavor. Core dry ingredients include - self raising flour, baking powder, salt, sugar.

Core wet ingredients include - 3 eggs, 600 ml pack buttermilk.

Mix dry & wet ingredients together then add clarified butter. Usually make small batches for 5 orders (10 pancakes) as the batter loses its air pockets, best to fold it in & not whisk it, in order to have lumps to create the air pockets.

Tasting Notes - Chef Shawn Koh uses a generous dose of that rich homemade salted caramel syrup which he happily drizzles an abundance onto the buttermilk flavored pancakes. Notice the well dispersed air pockets that the buttermilk pancakes possess that actually lends a spongy texture & a chewy bite to it.

The salted caramel gives a ultra opulent sweetness with a lightly salty flavor to the buttermilk pancakes, & can be pretty overpowering. The fresh Del Monte banana slices give an overall balance to the opulent sweetness from the salted caramel syrup.
