Stellar at 1-Altitude at One Raffles Place, Level 62 - $100Gourmet Dinner by CitiGroup on Friday 22 May 2015 (Part V)

The Occasion 
I had won the contest organised by $100Gourmet of CitiGroup on their Facebook in the month of May 2015. 
The Reward 
The prize reward is a pair of tickets to attend the $100Gourmet's 6 Course Dinner held at Stellar at 1-Altitude located at One Raffles Place, Level 62 on 22 May 2015, Friday.

Preparation of Fifth Course - The Beef Cheeks 
Here I manage to capture the moments of Chef Anthony Demetre & Chef Christopher Millar preparing the Beef Cheeks.

Open Kitchen Concept
We happen to be sitting right in front of the Open Kitchen so we had a bird's eye view of the entire Kitchen Operations. Here we have Chef Anthony Demetre & Chef Christopher Millar doing the last finishing touches for the Slow Cooked Beef Cheeks.

The Fifth Course 
This is the Slow Cooked Beef Cheeks prepared by Chef Anthony Demetre & Chef Christopher Millar. 
Core Ingredients - Beef Cheeks, Puree of Heirloom Carrots, Swiss Chard, Herbs from New Urban Farm, Buckwheat seeds.
Tasting Notes - For the Beef Cheeks to taste so flavorful, with a distinct intense rich, umami, savoury flavor that comes from being slow-cooked for at least 4 hours in red wine & the marinate. The beef cheeks has that melt-in-your-mouth consistency, tender succulent, soft texture. It helps that the puree of heirloom carrots contributes to a sweet flavor to balance the intense opulently rich umami flavor of the beef cheeks. The sauteed Swiss Chard lends a mildly salty taste to this dish. 
Last but not least the lightly toasted Buckwheat seeds adds to a nutty fragrant flavor.
