With over 26 years of culinary expertise
and innovation under his belt, Sam Leong is Singapore’s very own celebrity
chef. Trained by his father, a Malaysian chef well known for his shark fin
dishes, Sam stepped into the kitchens at Jiang Nan Chun at the Four Seasons
Hotel as Executive Chef at the tender age of 28. Later with the Tung Lok Group,
he was appointed the Director of Kitchens/Corporate Chef, where he set the
standards for modern Chinese cuisine in Singapore.
Sam has represented Singapore at some of
the world’s most prestigious culinary events, including the annual James Beard
Foundation Awards, Annual St Moritz Gourmet Festival in Switzerland and the
Flavours of Asia at Napa Valley, California.
His numerous awards, include receiving the
Best Asian Ethnic Chef of the Year, Executive Chef of the Year and Chef of the
Year Awards for several years at the World Gourmet Summit’s Awards of Excellence. In 2008, Sam was
honoured with the Five Star Diamond Award and was recognised as one of the
finest chefs worldwide in the American Academy of Hospitality Sciences.
Sam has appeared in several television
shows in Singapore, and has authored several cookbooks – A Wok Through Time,
Sensations and A Taste of Home.

In his first partnership foray with Resorts
World Sentosa, local celebrity chef Sam Leong’s Forest is making waves in
Singapore’s culinary scene for its bold reinvention, reinterpretation and
contemporising of Chinese cuisine. The “theatre kitchen” in Forest was designed
to give patrons an unobstructed view of the chefs at work making magic in the
kitchen. Chefs Leong and Mike Tan also take a Western approach in the service
and presentation of dishes. Guests are strongly encouraged to experience
Forest’s innovative 8-course or 10-course Discovery Menu – which promises to
take diners through a bold journey of tastes.
