Kuru Kuru Japanese Restaurant at Valley Point - Tempura Moriawase (Prawn and Vegetable Fritters)

This is the Tempura Moriawase (prawn and vegetable fritters) available under the TEMPURA Category in the Ala Carte Menu and Buffet Menu of Kuru Kuru Japanese Restaurant at Valley Point

The Tempura Moriawase consists of fresh prawns, sweet potato, pumpkin, eggplant, Japanese Shiitake mushroom coated with Tempura batter made using authentic Japanese Tempura powder and deep fried till cooked, and served with grated daikon (white radish) and tentsuyu sauce (made of 3:1:1 ratio of Dashi: Mirin: Shoyu ) 

What I like about this Tempura Moriawase is that the Chef bothers to use fresh prawns from the local market, deshelled it himself, stretch the prawn coat it with the Tempura batter made using authentic Japanese Tempura powder. 

Now the key to making great tasting Tempura is to use ice water to make the batter more light and the Tempura more crispy, and you need to prepare the batter just before frying. Traditionally Tempura batter is made using chopsticks in small quantities and mixed for a few seconds to leave lumps in the batter to create that fluffy crispy texture when fried. 
Food Tasting Notes : The Tempura Moriawase tastes absolutely crispy, fresh, fried just to the right consistency, not overly fried, not oily at all. I can tell Chef uses fresh prawn in the Tempura prawn as it is juicy and crunchy, not soggy, and does not have the flavor of those frozen and treated versions of the ebi furai (fried prawns) made with panko (breadcrumbs) you commonly find at a lot of Japanese food establishments that serve Japanese buffet.
