The Akatombo 赤とんぼ Menu 





Akatombo 赤とんぼ  is a Japanese all day dining concept located at Marina Bay Link Mall offering typically Japanese inspired Cuisine. The restaurant serves Nabe, Sushi, Oju, Curry & Omu Rice, Teishoku, Bento, Spaghetti, Sukiyaki. 

Akatombo 赤とんぼ opens its first new Singapore outlet at Marina Bay Link Mall & is managed by D&N Singapore, part of the parent company Doutor Nichires Holdings  Co., Ltd. in Japan. D&N Singapore also operates Doutor, Hoshino Coffee, Japanese-style spaghetti restaurant chain Yomenya Goemon and Chinese restaurant chain The Asian Kitchen here. 

The parent company Doutor Nichires Holdings Co., Ltd. engages in the management of cafes and restaurants in Japan. It is also involved in the manufacture and sale of bread and pastry products, processing and sale of roasted coffee; and import, export, purchase & sale of foods. The company was founded in 2007 and is headquartered in Tokyo, Japan.

The Signature Dishes at Akatombo 
Some of the Signature dishes on the menu of Akatombo赤とんぼ  include :
1. Soup Mediterranean made using Core Ingredients - Soup broth, seafood ingredients. 
The Mediterranean soup broth is made using: lobster bisque, diced tomato, cream sauce, pomodoro, Parmesan cheese, vegetable soup stock known as mirepoix (made using celery, carrots, onions), seafood stock (made from Japanese Katsuobushi bonito flakes or mackerel fish flake & kombu). 
The seafood ingredients for this dish include : frozen seafood such as white clams, mussels, tiger prawns, baby scallops, as well as fresh squid, tossed into spaghetti & finely chopped parsley to garnish. 

Tasting Notes - The soup broth is very umami, tasty & creamy, with tinge of savoury sweetness from the seafood stock & pomodoro used in this recipe. The seafood ingredients - mussels, clams , squid rings & prawns adds to the sweetness of this soup. 













2. Chirashi Jyu made using Core Ingredients - Raw Maguro (tuna), salmon, shrimp, Japanese cucumber, Shiitake mushroom, Shiso Oba leaves julienned, tamago, Tobiko(flying fish roe), kampio(kampyo), garlic, Sakura fish floss, Tobari, Japanese sushi rice with sugar, vinegar & mirin served ala minute.  

Tasting Notes - Very appetising flavor, the vinegar in the sushi rice helps to bring out the freshness of the ingredients. The Tobiko gives the bursts of salty freshness that pairs well with the sweetness from the tamago, tuna, salmon & the shrimp.
