Big Bern's American Grill at 978 Toa Payoh North #02-01 Stall 9 - The Making of Cheese Steak Po-Boy

This is the Signature Cheese Steak Po-Boy served at Big Bern's American Grill at 978 Toa Payoh North, Unit #02-01, Stall 9. This dish is priced at S$8.90 (Half baguette) & S$12.90 (Whole baguette). The sides accompanying this Cheese Steak consists of Cheese potatoes & fresh garden salad. 
Core Ingredients - Sliced beef rump, green capsicum, fresh raw onions, mixed spices, garden salad, boiled mashed potatoes with onions, Cheddar cheese, baguette.
How is it prepared - The beef rump is marinated with thyme, pepper. The beef rump is sliced thinly & grilled on the grill for 8 to 10 minutes till they are well done. To the beef rump slices is added the julienned fresh onions, nicely sauteed. Then chef adds the mixed spices to the onions, followed by green capsicum (julienned & sauteed). 
Some rue is added to the mixture in the pan to cook the beef & to lend it a savory flavor. To make the rue, Bernie Utchenik uses celery, onions, carrots, then adds a non alcoholic wine to finish it, plus just a dash of Worcestershire sauce for the color. Shredded Cheddar cheese are added to the beef for added flavor. 
The par-baked baguette are toasted to lend fragrant flavor to the baguette.
Once these are cooked & well done, they are served in a baguette, with sides such as the garden salad with thousand dressing, & Bernie Utchenik's homemade special recipe cheese potato. The baguette is lined with a layer of mayonnaise.

Tasting Notes - Tender thinly sliced juicy beef  is pretty much infused with herbs spices such as onions & green capsicum to lend a savory sweet flavorful flavor laden with lotsa spices. 
The onion lends a sweet accompaniment to the lightly sweet crunchy green capsicum that is nicely julienned. The usage of herbs lends a savory herby flavor. Chef gets the baguette from Delifrance.  
The thousand island dressing paired very well with the garden salad to give that lightly sourly sweet flavor. Prize winning signature is the cheese potato - a rustic savory flavor due to a fair amount of onions used in the recipe. This dish presents a heart warming rustic dish. Bernie Utchenik uses a fair amount of herbs spices to give you that home-style rustic comfort food flavor.
