This dish is made using Core Ingredients - chicken meat, onions, spinach, mushroom, eggs & flour (to make the crepe), Pomodoro sauce, fresh cream, fresh Coriander leaves to garnish.
How it is prepared - The crepe is made using eggs & flour and is made ala minute as per order. Then to it is added the stewed chicken meat, spinach, onion & mushroom which are then wrapped & baked & served with Pomodoro & cream sauce.
Tasting Notes - the Crespelle di Spinachi is one of my favorite Italian comfort food whenever I visit The Castel Cafe.
I love it that the chicken & mushroom are carefully stewed till they absorb the flavors of the broth & cooked till tender. They are then wrapped up in the crepes made fresh, & then baked with Pomodoro & cream sauce drizzled on top of the crepes.
The onion lends a sweet flavor to the pocket. The cream sauce used in this recipe is likely made from cream, milk, Pomodoro sauce & this lends a tarty creamy tomato flavor. This creamy sauce pairs so well with the savoury contents of the pocket.
The result is a heart warming savoury flavor of tender chicken & mushroom that blends with the tender eggy flavor of the crepe, & paired well with the creamy Pomodoro sauce.
