How it is prepared - The Castel Cafe Chef Mrs Lee home-makes the pizza dough & Pomodoro Sauce from scratch, layers the dough with generous shredded Mozzarella cheese, tops it with fresh squid rings, fresh de-shelled prawns, fresh white clams, herbs & spices & bakes it in the oven till well done.
Tasting Notes - The pizza crust is thin in the middle but slightly thicker at the edges around the circumference & has a crisp texture, with nice air pockets to lend it a chewy bite, yet it is baked till well done but not overly dry.
The Mozzarella cheese lends a cheesy savory flavor that blends well with the lightly sourly tarty Pomodoro sauce.
The generous dose of seafood mix - juicy fresh white clams, chewy juicy sweet fresh squid rings, fresh juicy large prawns adds a decent seafood flavor to this Signature Pescatora Pizza.
